Pinoy Breakfast Salad (Mothers Who Brunch)
Last May 30, I had the chance to host a lovely event together with Michelle of Momma 'N Manila and Viking Range Philippines. What was initially planned as a cooking session for four, surprisingly and organically turned into such a special event for twelve ladies. It was unbelievable how easily things came together so quickly for us and I think it was mostly because we are both very passionate about family, food and entertaining.
Right from the beginning, Michelle and I knew that we wanted to gather our mommy friends and share with them a piece of what we love to do. Also, we both happen to love brunch so it was only natural to have our event revolve around that special meal and to celebrate Mother's month, of course. So that was the birth of Mothers Who Brunch.

The lovely ladies that we invited over to cook with us and partake in brunch were special to Michelle and myself. Some of them were long-time friends, high school buddies, neighbors, IG friends and fellow bloggers. Some we already knew and some we were meeting for the first time. Nonetheless, these were all women, moms and moms-to-be who inspire us. We all went home that day learning something new and gaining a few more friends at that.
The Viking Range Philippines showroom was just oozing with positive energy, everyone was smiling and chatting away. The common factor amongst our mommy guests was that we all loved FOOD! It was a fun mix of kitchen novices to expert homemakers and we all helped each other to get our feast on!

The FOOD: Crudités with assorted dips (ranch, spinach-artichoke and chipotle hummus), tomato-chorizo egg stew, pinoy breakfast salad, pakwan salad, kangkong and kesong puti quiche, cottage cheese and mango pancakes, Momma 'N Manila's apple pie and homemade vanilla bean and cara sel (salted caramel) ice cream by yours truly.

For this particular post, I am sharing my recipe for Pinoy Breakfast Salad. This dish is such a hit each time I bring it as my potluck contribution! A real crowd-pleaser, for sure!=)
Pinoy Breakfast Salad
- 1 cup cooked adobo flakes
- 4 medium tomatoes, diced into small cubes
- Alfalfa sprouts
- 2 Salted eggs, cut into small cubes
- ¼ cup Kesong puti, cut into small cubes
- Mixed greens
- 2 Tbsp. Honey
- ¼ cup fresh calamansi juice
- ¼ cup olive oil
- 1 Tbsp. yellow mustard
- Place honey, calamansi juice, olive oil and yellow mustard inside a mason jar. Cover and shake vigorously.
- Arrange lettuce, tomatoes, kesong puti, alfalfa sprouts, salted eggs and adobo flakes salad bowl in two layers. Serve with calamansi vinaigrette.
