Bacon Chocolate Chip Cookies! SoooOOOoooo sinful, I know! I made this for a friend's blog giveaway some time ago, she gave me the idea for this flavour marriage of sorts and I was happy to oblige. I never did get the chance to post the recipe. So here now is my basic chocolate chip cookie recipe (a recipe that I've used again and again for about 10 years now). And just by adding bits of bacon it gets turned into an even more sinful treat.

My boys can't get enough of it. It's really addicting but please proceed with caution, it's quite indulgent. I can feel my hips growing wider just talking about it. Everything in moderation, I like to say (but not really apply *sigh*).

Bacon Chocolate Chip Cookies

Ingredients

  • 1 cup butter, room temperature
  • 1 cup light brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1 1/2 cups semi sweet chocolate chips
  • 1 cup cooked bacon bits

Instructions

  1. Preheat oven to 350 degrees Farenheit. Line two baking sheets with parchment paper.
  2. In the bowl of your electric mixer, cream the butter and sugars until light and fluffy (2-3 minutes). Add the egg and vanilla extract and beat until incorporated.
  3. Sift together flour, baking soda, and salt and add to the butter and egg mixture. Mix just until incorporated.
  4. Fold in the chocolate chips and bacon bits to the cookie mixture.
  5. Use an ice cream scooper or 1/4 measuring cup to scoop the cookie mixture onto the prepared baking sheets, placing them about 2 inches apart.
  6. Bake the cookies for approximately 12-15 minutes or until the cookies are still soft in the center but are firm around the edges.
  7. Remove from oven and let cookies cool on baking sheet for about 5 minutes before removing the cookies to a wire rack to cool completely.
