One Pan Salmon with Asparagus and Mushrooms


Okay, so I'm really loving this whole one sheet pan movement. In just one sheet pan you can prep, cook and serve! Isn't that mind-blowing!? I may be late in the game but I'm really getting into it. 

Salmon is not usually a part of my weekly grocery because It's a little bit pricey. But last week, I was able to come across excellent pieces of salmon fillet along with other nice produce like mushrooms and asparagus that inspired me to cook something special. On the weekends, when Sieg isn't flying and everyone is home, I plan meals that are a bit more special than the weekdays.

Now don't be intimidated because I called this dish special. Special doesn't always mean complicated. In fact, this is a cinch to make because you toss everything in one pan. That also means less dishes to clean! Plus, salmon cooks so quickly, your prep and cooking time combined is only 20-25 minutes!

I got all the ingredients for this dish from Walter Mart at W Mall Macapagal.

One Pan Salmon with Asparagus and Mushrooms


  • 750g Salmon fillet
  • 3 cloves garlic, crushed
  • 1 pc. lemon, sliced into rounds
  • 1 container enokitake mushrooms
  • 1 bunch asparagus
  • 1/8 cup grated parmesan cheese
  • 2 Tbsp. olive oil
  • 1-2 tsp. salt
  • 1/2 tsp. pepper


  1. Preheat oven to 450 deg F.
  2. In a sheet pan, place the salmon fillet (rinsed and pat dry) in one side, then the asparagus (cleaned and ends trimmed) and mushrooms on the other side.
  3. Drizzle everything generously with olive oil.
  4. Evenly rub crushed garlic and sprinkle parmesan cheese on the salmon fillet. Season salmon, asparagus and mushrooms with salt and pepper.
  5. Lay the sliced lemon rounds on the salmon fillet.
  6. Bake in middle rack for 10-12 minutes. Serve immediately.
